Resort Chef

Duties
Primary responsibilities include autonomy and oversight over the operation of the entire Tin Lizzie Gaming Resort with the primary focus on cuisine. Coordination of kitchen operations with sous chefs and other cooks throughout the property, who prepare the meals. Menu design, recipes, ingredients, food and beverage purchases, and training both front and back-of-the-house associates.
Chef de Cuisine will:
    • Check freshness of food and ingredients ensuring the highest quality products.
    • Help develop and execute banquet menu and food.
    • Be available at all times to visit with guests in the dining room to explain the meal, preparation and ingredients.
    • Supervise and coordinate activities of cooks and other food preparation workers
    • Develop recipes and determine how to present the food along with consistency
    • Plan menus and ensure uniform serving sizes and quality of meals
    • Help develop overall cuisine plan for the resort.
    • Inspect supplies, equipment, and work areas for cleanliness and functionality
    • Hire, train, and supervise cooks and other food preparation workers
    • Order and maintain inventory of food and supplies
    • Monitor sanitation practices and follow kitchen safety standards.
    • Making sure all cogs are inline.
    • Any other duties as directed by the Director of Food & Beverage for the resort.
