Scanway Catering is looking to higher a Garde Manger Chef that would be responsible for overseeing culinary operations in the Garde Manager section. Responsible for managing the food production and quality control for all meat, fish and other food items prepared in the cold kitchen. This individual will also be responsible for supporting the kitchen in any capacity needed including helping on the hot side of the kitchen. The chef will take all responsibility for maintaining and cleaning work area
Responsibilities:
-Oversee the consistency of various preparations within the cold kitchen to ensure quality product and adhere to standard recipes
-Prepares all cold food according to recipes, guidelines, and standards set by the Executive Chef or hotel standards
-Always keep all refrigeration, equipment, storage and working areas in clean, working condition in order to comply with health department regulations.
-prepares daily requisitions for supplies and food items for production
-Effectively communicate with other chefs and service staff in order to full fill and address any issues or needs requested by guests.
-Maintain complete knowledge of and comply with all departmental policies, procedures and standards
Qualifications:
-Working knowledge of the fundamentals of cooking
-Working knowledge of knives and knife skills-Working knowledge of kitchen equipment such as cryovac, slicing machine, juicer, etc.
-Previous experience working in a restaurant, hotel or catering kitchen-Secondary (high) school graduation certificate or equivalent experience.
-Strong attention to detail.
-Excellent interpersonal skills: approachable with good listening skills.
-Skilled and proactive in problem resolution.
